Lindy Wildsmith – Raw and Rare


Joins us for a talk, demo and tasting session with cook and food writer Lindy Wildsmith who specializes in British country and Italian regional food. Fish and game, home cooking and kitchen crafts, such as preserving, curing, smoking and potting, are high on her agenda.

Lindy is also a travel writer, in love with Italy, where she lived for many years. She is fascinated by the ties between people, culture and food. She has been a follower of Slow Food almost since its inception. She is a great believer in the importance of good, fresh, ingredients and using local shops.

Lindy will talk about her new book, Raw and Rare, and share a wealth of ideas for preparing and presenting raw fish, meat, vegetables and fruits. She will also provide variations if you prefer them lightly cooked, whether fleetingly applying the searing heat of a griddle, the flame of a blow-torch, a waft of hot or cold smoke, a surge of bubbling stock, or a brief encounter with a pickling potion, merely to seal the succulence within.
